Freedom Bakery and Confections is all that you would wish for in a neighborhood bakeshop: Family owned and operated since 1975, they produce all of their gourmet wedding cakes, cupcakes, cookies, and other confections in-house, made-to-order from scratch, using only the finest ingredients like pure Belgian chocolate.

But take it from us—this isn’t your grandmother’s bakery! Freedom combines traditional decorating skills with the latest technology, flavors and design trends. Bored with vanilla? How does Red Velvet cake with white Belgian chocolate cream cheese sound? They even print their own custom photo cookies and photo chocolates (think cute wedding favors!), printing directly on the treat so there’s NO starchy rice paper!

Tell us about your company name.
Freedom Bakery & Confections: We started our business in 1975 on Freedom Boulevard and when we started making our own Belgian chocolates and other confections, we added Confections to the name.
Why should someone hire you?
People should hire us first and foremost for a great tasting cake. Our decorating skills and capabilities compliment our taste with great cake designs. In today's market, there are many single-operator studios. We are a true bakery with the equipment and skill sets to make cakes that brides dream about.
What are the common misconceptions about your services?
That a beautiful wedding cake must be covered in fondant. We have the skill and capabilities to create many designs in buttercream that most bakeries claim is not possible.
What drew you to this field/how did you get started?
We are a second-generation family-owned bakery. Owner and Baker, Paul, has been helping his family with the bakery since a teenager. After college, he earned a CPA license and worked for a major accounting firm. But after a few years, he decided he enjoyed the creativity and hands-on experiences in the bakery business much more.
What are some sources of inspiration or influences on your work?
It's all about the bride, groom, their day and style. Inspiration all comes from the couple and what they're looking for. Our starting point is listening to the couple and their vision. From that point, we work with them to achieve a design that is within their budget.
A major influence comes from Paul's dad. Since 1975, the bakery's constant goal was to provide quality taste, service, and design. We use only the best ingredients including imported Belgian chocolate, the freshest dairy and produce from our local vendors. To keep up with the times, we attend shows to see the latest trends and equipment.
What makes a wedding memorable for you?
What makes weddings truly memorable for us really happens days or weeks after the event when a bride (and sometimes groom) takes the time to tell us that we did a great job and that it was everything they were looking for in a wedding cake. It's an absolute pleasure when a bride feels like we made a positive impact on one of the happiest days of her life.
What is the best advice you give to a couple when planning their wedding?
Do what you want to do. It doesn't matter "what other brides do." It's your wedding.
