Reviews

“Thank you freedom bakery! You make not only beautiful but delicious desserts!

“Their cookies and cakes are in a league of their own. The chocolates they produce for personalized favors and giveaways are top quality.”

“Once we saw that you could personalize treats for favors we decided to customize our lemon shortbread cookies with a picture of our little dog, Cali on them. Everyone knows her and loves her and we could not have her there, so it was nice to be able to incorporate her into the wedding somehow.”

“Their customer service, tasty cakes, and ability to work with our budget exceeded our expectations and clearly surpassed other bakeries we visited.”

“We made an appointment and Paul had everything ready for us when we arrived—albums of cake pictures, samples of their best sellers, huge smiles and amazing prices!

“Freedom is an awesome bakery—a little gem in Watsonville.”

“We took Paul a picture of what we wanted and he made it far more amazing than we could have hoped for.”

Questions and Answers

What 3 words describe your work?
Quality. Skilled. Unique.
Tell us about your company name.
Freedom Bakery & Confections: We started our business in 1975 on Freedom Boulevard and when we started making our own Belgian chocolates and other confections, we added Confections to the name.
What drew you to this field/how did you get started?
We are a second-generation family-owned bakery. Owner and Baker, Paul, has been helping his family with the bakery since a teenager. After college, he earned a CPA license and worked for a major accounting firm. But after a few years, he decided he enjoyed the creativity and hands-on experiences in the bakery business much more.
What are some sources of inspiration or influences on your work?
It's all about the bride, groom, their day and style. Inspiration all comes from the couple and what they're looking for. Our starting point is listening to the couple and their vision. From that point, we work with them to achieve a design that is within their budget.
A major influence comes from Paul's dad. Since 1975, the bakery's constant goal was to provide quality taste, service, and design. We use only the best ingredients including imported Belgian chocolate, the freshest dairy and produce from our local vendors. To keep up with the times, we attend shows to see the latest trends and equipment.
What is the best advice you give to a couple when planning their wedding?
Do what you want to do. It doesn't matter "what other brides do." It's your wedding.
