What inspired you to create your own signature blend of Indian spices?
I created these spice blends to help make tasty regional Indian dishes. I dug out favorite dishes of three kings and three queens from different regions of India to inspire me to create these unique spice blends. Some couples have even used these as memorable and delicious wedding favors.Can you tell us about a memorable moment you recall from your wedding catering experience?
There was the time when a couple made a donation to a charity we run, called the Compassionate Chefs Café. The donations support disadvantaged children in the Tenderloin as well as at the Gandhi Ashram in India. For the couple, this was their way of celebrating their wedding. Imagine their surprise when I later sent them a receipt making their donation tax deductible!
Your wedding menu offers a range of regional cuisines from across India, but what is the "Exotic Mughlai" wedding menu?
Mughlai Cuisine is a style of cooking that originated in the Imperial kitchens of the Mughal Empire. The tastes of Mughlai Cuisine vary from extremely mild to spicy, and are often associated with the distinctive aroma and taste of ground and whole spices.Brides at Indian weddings wear henna on their hands. Is this a part of all Indian weddings?
Indian weddings are full of revelry and the art of henna is often a big part of the festivities.Can you tell us a little more about your documentary series called My India?
This is a documentary series about different regional Indian cuisines that I filmed in India. It is a culinary, cultural travel adventure show, and you can watch the episodes on YouTube.New Delhi Restaurant offers a range of signature events from "Spicy Affair" to "Bollywood Dance Party." What led you to create these events?
New Delhi Restaurant has a series of events based on fun and games, and revolving around food. These theme parties are for pre and post wedding fun and corporate or social events. These are designed to make any party or gathering more memorable.What are your thoughts on using food events for corporate team-building exercises?
